Flatbreads with green olive paste and mixed tomatoes

Ingredients

  • 1 1/2 cups (225g) plain flour
  • 1 tsp salt
  • 1/4 cup (70g) Greek-style yoghurt
  • 1/4 cup (60ml) hot water
  • 1 tbs olive oil
  • 1 large vine-ripened tomato, thinly sliced
  • 2 roma tomatoes or kumatoes, thinly sliced
  • 200g mixed medley tomatoes, thinly sliced
  • Coles Basil Pesto, to serve

Green olive paste

  • 1 cup (120g) pitted green olives
  • 1 garlic clove, crushed
  • 2 anchovy fillets, coarsely chopped
  • 1/4 cup (35g) slivered almonds, toasted
  • 1/2 cup mint leaves
  • 1/3 cup (80ml) olive oil

Method

  1. Step 1

    Combine the flour and salt in a large bowl. Make a well in the centre. Add the yoghurt and water and stir with a flat-bladed knife until combined. Turn onto a lightly floured surface. Knead for 5 mins or until smooth. Return to the bowl and cover with plastic wrap. Set aside for 1 hour to rest.
  2. Step 2

    Meanwhile, to make the green olive paste, place the olives, garlic, anchovy, almond and mint in a food processor and process until finely chopped. Add the oil in a thin steady stream and process until a smooth paste forms. Season.
  3. Step 3

    Heat a chargrill on medium. Divide the dough into 4 even portions. Roll each portion out on a lightly floured surface to a 3mm-thick, 25cm disc. Brush with oil. Cook on the chargrill, in batches, for 2 mins each side or until lightly charred and cooked through.
  4. Step 4

    Place the flatbreads on serving plates and spread with the olive paste. Arrange the combined tomato over the olive paste. Drizzle with basil pesto.
