  • 2 large red or brown onions, thinly sliced
  • 2 tbs red wine vinegar
  • 2 tbs caster sugar
  • Lemon thyme leaves, to serve

  1. Step 1

    Melt the butter in a medium frying pan over low heat. Cook the onion, stirring occasionally, for 10-15 mins or until the onion softens.
  2. Step 2

    Stir in the vinegar and sugar. Cook, stirring, for a further 5 mins or until golden and caramelised. Sprinkle with lemon thyme leaves to serve.
