Ingredients

  • 8 Coles Australian RSPCA Approved Chicken Drumsticks
  • 20g pkt MasterFoods Chicken Spice Blend
  • 1 tbs olive oil
  • 2 chicken stock cubes
  • 40g pkt Coles French Onion Soup Mix
  • 2 cups (400g) long-grain white rice
  • 2 corn cobs, husks and silk removed, quartered crossways
  • 1 bunch baby broccoli, halved lengthways

Method

  1. Step 1

    Preheat oven to 180°C. Pat the chicken dry with paper towel. Place in a large bowl. Add the seasoning and toss to coat. Heat oil in a large frying pan over medium heat. Cook chicken, turning, for 3-4 mins or until golden brown.
  2. Step 2

    Combine the stock cubes, soup mix and 4 cups (1L) water in a 10-cup (2.5L) roasting pan. Stir in the rice. Arrange the chicken over the rice mixture. Cover and bake for 25 mins or until the rice is tender. Uncover and bake for a further 10 mins or until the chicken is golden brown and the liquid is absorbed.
  3. Step 3

    Meanwhile, cook the corn in a large saucepan of boiling water for 7 mins or until tender, adding the baby broccoli for the last 2 mins of cooking. Drain.
  4. Step 4

    Divide the corn mixture and chicken and rice mixture among serving plates.
