Fried rice is the king of anything-goes convenience. This one tops brown rice with eggs, spring onion, radicchio and coriander for something different.

  • 2 Coles Australian Free Range Eggs, lightly whisked
  • 450g pkt microwavable brown rice
  • 2 spring onions, thinly sliced
  • 1 tbs salt-reduced soy sauce
  • 1/2 radicchio, finely shaved
  • Coriander sprigs, to serve
  • Thinly sliced spring onion, extra, to serve

  1. Step 1

    Heat a greased frying pan over high heat. Add the egg and swirl to coat the base of the pan. Cook for 30 secs or until set. Transfer the egg to a clean work surface, roll into a log and thinly slice crossways.
  2. Step 2

    Add the rice and spring onion to the pan and stir-fry for 2-3 mins or until heated through. Stir in the soy sauce. Divide the rice mixture among bowls. Top with the egg, radicchio, coriander and extra spring onion to serve.
