Fuss-free sweet and sour pork

Ingredients

  • 2 tsp sesame oil
  • 300g Coles Australian Pork Fillet, thinly sliced
  • 1 red onion, cut into wedges
  • 1 red capsicum, seeded, thinly sliced
  • 1 yellow capsicum, seeded, thinly sliced
  • 1 mini pineapple, peeled, cored, thinly sliced
  • 1/2 cup (125ml) sweet and sour sauce
  • 1 cup coriander leaves
  • 450g pkt microwavable brown rice

Method

  1. Step 1

    Heat half the oil in a wok or large frying pan over high heat. Add one-third of the pork and stir-fry for 1-2 mins or until golden brown.
  2. Step 2

    Transfer to a bowl. Repeat, in 2 more batches, with the remaining pork.
  3. Step 3

    Heat the remaining oil in the wok or pan. Add the onion and combined capsicum and stir-fry for 2 mins or until just tender. Return the pork to the wok or pan with the pineapple and sweet and sour sauce. Stir-fry for 2-3 mins or until heated through. Add half the coriander and toss to combine.
  4. Step 4

    Meanwhile, heat the rice following packet directions.
  5. Step 5

    Divide the rice and pork mixture among serving bowls and sprinkle with remaining coriander. Serve immediately.
