Ingredients

  • 2 x 220g pkts Coles Australian Prawns with Garlic and Herb Marinade*
  • 2 x 250g pkts coconut rice
  • 2 bunches asparagus, woody ends trimmed, thinly sliced lengthways
  • 2 spring onions, cut into matchsticks
  • 350g pkt Coles Kitchen Green Goddess Salad Kit

Method

  1. Step 1

    Thread prawns onto 8 metal or soaked bamboo skewers. Season. Heat a greased barbecue grill or chargrill on high. Cook skewers, turning, for 5 mins or until charred and cooked through. Transfer to a plate and cover loosely to keep warm.

  2. Step 2

    Place rice, asparagus and half the spring onion in a large microwave-safe bowl. Cover and microwave on high for 2 mins or until asparagus is just tender. Season. Toss to combine.

  3. Step 3

    Divide the leaves from the salad kit and rice mixture among serving bowls. Drizzle with the dressing from the kit. Top with the skewers and sprinkle with the remaining spring onion.

Don’t throw out the asparagus ends! They’re full of flavour and delicious when added to soups. Simply simmer them along with your other veggies and blend well before serving.
