Giant turkey and bacon club sandwich made from a Vienna loaf

Ingredients

  • 550g white sourdough loaf or bread rolls
  • 2 tbs olive oil
  • 4 rashers shortcut bacon or leftover ham
  • 1/3 cup (100g) aioli or mayonnaise
  • 6 butter lettuce leaves or any salad leaves you have on hand
  • 300g leftover turkey or chicken
  • 3 tomatoes, sliced
  • 4 slices Swiss cheese or any cheese you have on hand

Method

  1. Step 1

    Use a large serrated knife to split a loaf of sourdough bread horizontally into 3 layers. Brush the cut sides of bread with 1 1/2 tbsp of the oil. Heat a large frying pan over medium-high heat. Cook the bread, in batches, for 1 min each side or until toasted.

  2. Step 2

    Heat the remaining oil in the same pan. Cook the bacon or leftover ham for 3 mins each side or until golden. Remove from heat.

  3. Step 3

    Place the bread base cut-side up on a serving platter. Spread with half the aioli or mayonnaise. Top with half the lettuce or sald leaves, half the turkey or chicken and the bacon. Season. Top with the middle bread layer. Spread with the remaining aioli or mayonnaise. Top with the remaining lettuce or salad leaves, tomato, cheese and remaining turkey or chicken. Sandwich with the remaining bread top. Insert 4 small skewers into the sandwich to secure. Slice into quarters to serve.
