Gingerbread-glazed dutch carrots

Ingredients

  • 3 bunches Dutch carrots, trimmed, peeled
  • 1/2 cup (30g) bought gingerbread biscuits or uniced homemade gingerbread biscuits (see recipes pages 67 and 86), coarsely chopped

Gingerbread glaze

  • 60g butter
  • 2 tbs brown sugar
  • 1 tsp ground ginger
  • 1/2 tsp mixed spice

Method

  1. Step 1

    Cook the carrots in a steamer over a saucepan of simmering water for 3-5 mins or until tender crisp.
  2. Step 2

    Meanwhile, to make the gingerbread glaze, place the butter, sugar, ginger and mixed spice in a large frying pan over medium heat. Cook, stirring, for 1-2 mins or until the butter melts and the sugar dissolves.
  3. Step 3

    Add the carrots to the gingerbread glaze mixture and season. Toss to combine. Transfer the glazed carrots to a serving platter. Sprinkle with the chopped gingerbread.
