Ingredients

  • 500g pkt Coles Potato Gnocchi
  • 400g Perino tomatoes
  • 2 zucchini, chopped
  • 1 red onion, cut into wedges
  • 2 tbs extra virgin olive oil
  • 2 garlic cloves, crushed
  • 1 tsp dried Italian herbs
  • 1/2 tsp dried chilli flakes (optional)
  • Shaved parmesan, to serve
  • Basil leaves, to serve

Method

  1. Step 1

    Preheat oven to 200°C. Line a large roasting pan with baking paper. Combine the gnocchi, tomatoes, zucchini and onion in the lined pan.
  2. Step 2

    Combine the oil and garlic in a small bowl. Drizzle the oil mixture evenly over the gnocchi mixture in the pan. Sprinkle with the herbs and chilli flakes, if using. Season and fold to combine, spreading the mixture out in an even layer over the base of the pan.
  3. Step 3

    Bake, folding the gnocchi mixture halfway through cooking, for 20 mins or until vegetables are golden and tender. Sprinkle the gnocchi mixture with parmesan and basil to serve.
