Ingredients

  • ½ cup (85g) mixed peel
  • 1 cup (150g) Coles Turkish Dried Apricots, chopped
  • ½ cup (80g) currants
  • 150g pkt Coles Sweetened Dried Cranberries
  • 1 cup (190g) coarsely chopped dried figs
  • 375g pkt sultanas
  • 375g pkt raisins, chopped
  • 2 Granny Smith apples, peeled, coarsely grated
  • 1½ cups (330g) brown sugar
  • 2 tsp mixed spice
  • 1½ cups (375ml) Frangelico liqueur or orange juice

Method

  1. Step 1

    Combine the mixed peel, apricot, currants, cranberries, fig, sultanas, raisin, apple, sugar, mixed spice and liqueur or orange juice in a large bowl. Cover and store in a cool, dark place for at least 1 week, stirring every 2 days, to develop the flavours.
  2. Step 2

    Spoon into sterilised jars (see jam recipe p98) and seal. Store in a cool, dark place for up to 6 months.
