Loaded with shredded chicken and crisp salad veggies, this Greek sandwich is the perfect weekday lunch. Add the finishing touch with some creamy tzatziki.

Ingredients

  • 4 cherry tomatoes, halved, or chopped tomatoes
  • 1/3 Lebanese cucumber, finely chopped
  • 1/4 small red capsicum, seeded, finely chopped
  • 4 pitted kalamata olives, halved
  • 1/2 cup shredded hot roast chicken or leftover turkey
  • 1 pita bread pocket or any bread
  • 1 1/2 tbs tzatziki dip or plain yoghurt
  • 1/2 cup shredded cos lettuce or mixed leaves

Method

  1. Step 1

    Place the tomato, cucumber, capsicum, olives and chicken or turkey in a small bowl. Season and toss to combine.

  2. Step 2

    Cut the pita in half. Using your fingers, separate each half to form a pocket. Spread half the tzatziki dip or plain yoghurt inside each pocket. If you're using another type of bread, spread one half with 3/4 tbs of tzatziki dip or plain yoghurt. Fill or top with lettuce or mixed leaves and the chicken or turkey salad mixture. Squeeze over remaining tzatziki dip or plain yoghurt to serve.
