Green goddess pasta salad


  • 600g pkt Coles Spinach & Ricotta Agnolotti Pasta
  • 2 bunches asparagus, woody ends trimmed, halved diagonally
  • 350g pkt Coles Kitchen Green Goddess Salad Kit or Kaleslaw Salad Kit
  • 1 lemon, rind finely grated, juiced
  • 100g fetta, crumbled

  1. Step 1

    Cook pasta in a large saucepan of boiling water following packet directions or until al dente, adding the asparagus for the last 2 mins of cooking. Refresh under cold water. Drain well.
  2. Step 2

    Meanwhile, heat a greased frying pan over medium heat. Add almonds or seeds from the salad kit and cook, stirring, for 1-2 mins or until toasted.
  3. Step 3

    Place the pasta mixture and salad from the salad kit in a large serving bowl. Add the lemon rind, lemon juice and dressing from the salad kit and toss to combine. Top with the fetta and toasted almonds or seeds. Season with pepper.
