Sausages and baked beans never looked so good. Especially with these homemade baked beans that are so fresh and flavoursome.

Grilled beef sausages with homemade baked beans

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 1 carrot, peeled, chopped
  • 1 celery stick, chopped
  • 2 dried bay leaves
  • 2 tsp smoked paprika
  • 700g btl tomato pasta sauce
  • 2 tbsp golden syrup
  • 3 x 400g cans butter beans, rinsed, drained
  • 1.7kg Coles Australian Thin Barbecue Beef Sausages
  • 8 hash browns
  • 8 roma tomatoes, halved
  • 300g pkt Coles Australian Baby Spinach Leaves
  • 8 slices bread, toasted, to serve

Method

  1. Step 1

    Heat oil in a large saucepan over medium heat. Cook onion, carrot, celery and bay leaves for 5 mins or until softened. Add paprika and cook for 1 min or until fragrant. Add pasta sauce and golden syrup and bring to a simmer. Stir in beans and simmer, uncovered, for 10 mins or until sauce thickens slightly.
  2. Step 2

    Meanwhile, cook sausages in a large lightly oiled frying pan over medium heat, in batches, for 8 mins or until browned and cooked through. Remove from heat.
  3. Step 3

    Cook hash browns following packet directions. Cook tomatoes in the frying pan for 2 mins each side or until softened and heated through. Season.
  4. Step 4

    Place spinach in a large saucepan. Cook, stirring, for 2 mins or until just wilted. Season.
  5. Step 5

    Divide bread among serving plates. Top with spinach and bean mixture. Serve with sausages, hash browns and tomato.
