Grilled cos lettuce with almonds

Ingredients

  • 2 baby cos lettuce, quartered
  • 1 tbs olive oil
  • 2 tbs flaked almonds, toasted
  • ¼ cup (25g) shaved parmesan
  • 1 tbs olive oil, extra
  • 3 tsp white wine vinegar
  • 2 tsp wholegrain mustard
  • 1 tbs honey

Method

  1. Step 1

    Drizzle lettuce with oil. Heat a barbecue grill or chargrill on medium. Cook lettuce for 3-4 mins each side or until lightly charred.
  2. Step 2

    Arrange lettuce on a serving plate. Sprinkle with almond and parmesan.
  3. Step 3

    Whisk the extra oil, vinegar, mustard and honey in small bowl. Drizzle over lettuce. Season.
