These rice paper rolls are a rainbow of colour, but they taste even better than they look. Great for work or school lunches or when your craving a fresh crunchy meal.

Ingredients

  • 350g pkt Coles Kitchen Kaleslaw Salad Kit
  • 2 tbs sriracha mayonnaise, plus extra to serve
  • 12 large rice paper sheets
  • 12 slices shaved leg ham
  • 1 cup (120g) coarsely grated tasty cheddar

Method

  1. Step 1

    Prepare the salad kit in a large bowl. Add sriracha mayonnaise and toss to combine.
  2. Step 2

    Fill a shallow dish with warm water. Working in batches, dip rice paper sheets in the water. Drain and place on a clean board.
  3. Step 3

    Top rice paper sheets evenly with ham, the kaleslaw mixture and cheddar. Working quickly, fold the edge of 1 rice paper sheet over the filling. Fold in the sides, then roll up to enclose. Repeat to make 12 rolls.
  4. Step 4

    Cut the rice paper rolls in half crossways and transfer to a serving plate. Serve the rice paper rolls with extra sriracha mayonnaise.
