20 ham and kaleslaw rice paper rolls with mayonnaise

Ingredients

  • 350g pkt Coles Kitchen Kaleslaw Salad Kit
  • 2 tbs sriracha mayonnaise
  • 12 large rice paper sheets
  • 12 slices shaved gluten-free leg ham
  • 1 cup (120g) coarsely grated cheddar
  • Sriracha mayonnaise, extra, to serve

Method

  1. Step 1

    Prepare the salad kit in a large bowl. Add the sriracha mayonnaise and toss to combine.
  2. Step 2

    Fill a shallow dish with warm water. Working in batches, dip rice paper sheets in the water. Drain and place on a clean board.
  3. Step 3

    Top rice paper sheets evenly with the ham, kaleslaw mixture and cheddar. Working quickly, fold the edge of 1 rice paper sheet over the filling. Fold in the sides, then roll up to enclose. Repeat to make 12 rolls.
  4. Step 4

    Cut the rice paper rolls in half crossways and transfer to a serving plate. Serve with the extra mayonnaise.
