Ingredients

  • 600g chopped Royal Gala apples
  • 1/4 cup (60ml) sugar-free maple syrup
  • 1 tbs almond meal
  • 1 cup (90g) Coles Rolled Oats
  • 1/4 cup (40g) chopped pecans
  • 2 tsp ground cinnamon
  • 1 tbs (20g) Nuttelex Lite
  • 1/2 cup (140g) Coles Simply Light Greek Style Yoghurt

Method

  1. Step 1

    Preheat oven to 180°C. Combine the apple, 1 tbs maple syrup and 1/2 cup (125ml) water in a medium saucepan, and stir to combine. Place over high heat. Cook, stirring, for 5 mins or until the mixture boils and apple softens slightly. Add the almond meal and stir to combine.

  2. Step 2

    Spoon apple mixture into 6 x ¾-cup (185ml) ovenproof ramekins. Combine the oats, pecan and cinnamon in a medium bowl. Add the Nuttelex and remaining maple syrup and use your fingertips to rub into the oat mixture until well-combined. Sprinkle over the apple mixture in the dish.

  3. Step 3

    Bake for 20-25 mins or until the top is golden brown and the filling is heated through. Serve with yoghurt.

Traditionally, apple desserts call for tart apple varieties, such as Pink Lady and Granny Smith, simmered in sugar to counter the sour flavour. It’s then loaded with flour, butter and more sugar. Our healthy apple crumble recipe uses Red Gala, a naturally sweeter apple, which is baked with a crumble topping using oats, plus almond meal instead of flour. The topping is flavoured with sugar-free maple syrup and a sprinkle of cinnamon, which provides all the spiced sweetness synonymous with the beloved apple crumble. 

What makes the perfect apple crumble?

The best apple crumble should have a luscious, soft apple filling and a crunchy, slightly chewy topping. And while you may be tempted to pile on extra topping, it may result in a topping that is too dense and will lose its crunchiness. Another important step to making a warming apple crumble is to allow it to cool slightly, so the juices can set. You can also pre-cook and then reheat this sweet treat if you want to make it ahead of time.
