Place cauliflower in a food processor. Process until very finely chopped. Place in a microwave-safe bowl. Cover and cook on high for 8 mins or until tender. Drain, pressing with the back of a spoon to remove as much moisture as possible. Place cauliflower in a large bowl. Cool for 15 mins.
Preheat oven to 220°C. Line a large baking tray with baking paper. Add the egg, almond meal and parmesan to cauliflower and stir to combine. Place on lined tray and shape into a 25cm x 37cm rectangle. Bake for 20 mins or until golden.
Meanwhile, combine curry powder and 1 1/2 tbs of water in a small bowl until smooth.
Spread curry mixture over cauliflower base, top with mushroom, onion and tofu, and sprinkle with yeast. Bake for 15 mins or until base is golden and vegetables are tender.
To serve, top with bean sprouts, coriander, cashews and lime wedges.
