  • 1 tbs olive oil
  • 1 brown onion, finely chopped
  • 2 medium carrots, coarsely grated
  • 2 garlic cloves, crushed
  • 2 x 400g canned Coles Italian Diced Tomatoes
  • 2 x 400g canned cannellini beans, rinsed, drained
  • 120g Coles Australian Spinach leaves
  • 4 thin slices (200g) Coles Bakery Light Rye Sourdough, toasted
  • 1 tbs thyme leaves

  1. Step 1

    Heat the oil in a large frying pan over medium-high heat. Cook the onion, carrot and garlic, stirring, for 5 mins or until onion softens.

  2. Step 2

    Add the tomato and beans to the pan and cook, stirring occasionally, for 10 mins or until mixture thickens slightly. Stir in spinach and cook, stirring, for 2 mins or until spinach wilts. Season with pepper.

  3. Step 3

    Serve beans, sprinkled with thyme, with sourdough.
