Healthy lobster and soba noodles

Ingredients

  • 4 Coles Deli Lobster Tails (240g meat)
  • 120g soba noodles
  • 2 tsp sesame oil
  • 1 1/2 tbs olive oil
  • 1 red capsicum, seeded, thinly sliced
  • 2 x 150g pkt brown cup mushrooms, sliced
  • 1 tbs finely grated ginger
  • 2 garlic cloves, crushed
  • 1 bunch bok choy, chopped
  • 1 bunch choy sum, chopped
  • 1 spring onion, thinly sliced
  • 1 tsp salt-reduced soy sauce
  • 1/4 cup coriander leaves
  • 1 long red chilli, thinly sliced
  • 2 tsp sesame seeds, toasted
  • Sliced spring onion, thinly sliced, extra, to serve

Method

  1. Step 1

    Remove lobster meat from the shell and thickly slice.

  2. Step 2

    Cook the noodles in a medium saucepan of boiling water for 4 mins or until tender. Drain well. Cover to keep warm.

  3. Step 3

    Meanwhile, heat the sesame oil in a wok or large frying pan over high heat. Stir-fry lobster for 4 mins or until cooked through. Transfer to a bowl and cover to keep warm.

  4. Step 4

    Heat the olive oil in the wok or frying pan and add the capsicum and mushrooms. Cook, stirring, for 3 mins or until tender. Add the ginger, garlic, bok choy, choy sum and spring onion and stir-fry for 3 mins or until vegetables are tender. Add the soy sauce and 2 tbs of water and toss to combine.

  5. Step 5

    Divide noodles among serving bowls. Top with vegetables and lobster. Sprinkle with coriander, chilli, sesame seeds and extra spring onion, to serve.
