Heat the oil in a large saucepan over medium heat. Add the onion, carrot, celery and garlic and cook, stirring, for 5 mins or until onion softens.
Add tomato and 4 cups (1 litre) of water and bring to the boil. Reduce heat to low, and simmer, partially covered, for 10 mins or until vegetables are tender. Remove from heat. Set aside for 5 mins to cool.
Use a stick blender to blend tomato mixture until almost smooth.
Place the soup over low heat. Add the marinara mix, chickpeas, spinach and basil, and cook, stirring occasionally, for 4 mins or until seafood is cooked through.
Ladle soup among serving bowls. Top with almonds and extra basil leaves to serve. Season with pepper.
