Ingredients

  • 395g can sweetened condensed milk
  • 250g butter, chopped
  • 1/4 cup (25g) cocoa powder
  • 1/4 cup (20g) shredded coconut
  • 2 x 250g pkts plain sweet biscuits, coarsely chopped
  • 250g dark chocolate, melted
  • Flaked or shredded coconut, to serve (optional)

Method

  1. Step 1

    Grease a 19cm x 29cm slice pan. Line the base and 2 long sides with baking paper, allowing the sides to overhang.

  2. Step 2

    Place the condensed milk and 225g of the butter in a large saucepan over medium heat. Cook, stirring, for 5 mins or until butter melts and mixture is smooth. Remove from heat. Add the cocoa and coconut and stir to combine. Add the biscuits and a pinch of salt and stir to combine.

  3. Step 3

    Pour mixture into the prepared pan and smooth the surface. Place in the fridge for 10 mins to cool.

  4. Step 4

    Meanwhile, place the chocolate and remaining butter in a heatproof bowl over a saucepan of simmering water. Stir until chocolate melts and mixture is smooth. Pour over slice and use a palette knife to spread evenly over the slice. Sprinkle with coconut. Place in the fridge for 3 hours or overnight until firm and set. Cut into squares and sprinkle with flaked coconut to serve.

Clever storage:
Place leftover shredded coconut in an airtight container in the fridge for up to 6 months. Discard shredded coconut that has a yellow tinge and is brittle.

Ingredient tip: You can substitute dark chocolate for milk chocolate.

Here are some tips for making the best hedgehog slice:

  • You can use your hand to break the biscuits, a knife to chop them, or a rolling pin to crush them (place the biscuits in a resealable bag first).
  • Put the biscuit crumbs into the slice as well, instead of throwing them out.
  • Choose full-fat condensed milk so that the slice holds its shape.
  • Place the slice in the fridge to set for at least 3 hours or longer before portioning.
  • Allow your slice to sit at room temperature for around 20 minutes before cutting, and heat the knife in hot water prior to avoid shattering the chocolate top.

Transfer the slice to an airtight container in the fridge for up to 5 days. To freeze, cut it up into individual portions first and freeze them on a single-layer tray. Then, place the frozen slices into a freezer-safe airtight container and freeze for up to 3 months.
