Herbed BBQ Prawns

Ingredients

  • 1/4 cup coarsely chopped coriander
  • 1/4 cup coarsely chopped mint
  • 2 tbs coarsely chopped flat-leaf parsley
  • 2 tbs chopped oregano
  • 1 garlic clove, crushed
  • 1/4 cup (60ml) white wine vinegar
  • 1/4 cup (60ml) extra virgin olive oil
  • 1.5kg Coles Australian Raw King Prawns, peeled leaving tails intact, deveined

Method

  1. Step 1

    Combine the coriander, mint, parsley, oregano, garlic, vinegar and oil in a medium bowl. Season.
  2. Step 2

    Place the prawns in a large bowl. Add 2 tbs of the coriander mixture and toss to combine.
  3. Step 3

    Heat a barbecue grill or chargrill on medium-high. Cook the prawns, in batches, turning occasionally, for 5 mins or until prawns curl and change colour. Transfer to a serving platter. Drizzle with the remaining coriander mixture to serve.
