Ingredients

  • 1 Coles Australian Pork Loin Roast with Herbs & Spices
  • 1kg baby potatoes
  • 2 tbs olive oil
  • 1 bunch (about 400g) baby carrots, ends trimmed
  • 1/3 cup (25g) finely grated parmesan
  • 200g green beans, ends trimmed

Method

  1. Step 1

    Preheat oven to 180°C. Line a deep baking tray with baking paper. Place the pork in the centre of the tray. Arrange the potatoes around the pork. Drizzle with oil. Roast for 1 hour or until the pork is cooked to your liking, adding the carrots to the tray for the last 10 mins of cooking. Transfer the pork to a plate and cover with foil to keep warm.
  2. Step 2

    Use a clean tea towel to gently squash the potatoes. Sprinkle with the parmesan. Return the tray to the oven and roast for a further 15 mins or until the potatoes are golden and the carrots are tender.
  3. Step 3

    Meanwhile, cook the beans in a large saucepan of boiling water for 2-3 mins or until bright green and tender crisp. Drain well.
  4. Step 4

    Season the pork and serve with the potatoes, carrots and beans.
