Hoisin, beef and cashew stir-fry

Filled with beef, cashews and veggies, this hoisin stir-fry is an easy but flavoursome meal that's perfect for your busy weeknights.

Ingredients

  • 2 tbs peanut oil
  • 750g Coles Australian Beef Rump Steak, thinly sliced
  • 2 spring onions, thinly sliced
  • 150g snow peas, trimmed
  • 1 bunch choy sum, coarsely chopped
  • 1 cup (80g) bean sprouts
  • ½ cup (75g) cashews, toasted
  • ⅓ cup (80ml) hoisin sauce
  • 2 garlic cloves, crushed
  • Steamed jasmine rice, to serve
  • Thinly sliced red chilli, to serve (optional)
  • Lime wedges, to serve

Method

  1. Step 1

    Heat oil in a large frying pan or wok over high heat. Stir-fry the beef for 5 mins or until browned and cooked through. Transfer to a plate.
  2. Step 2

    Add spring onion and snow peas to the pan or wok. Stir-fry for 1-2 mins or until just tender.
  3. Step 3

    Add choy sum and bean sprouts to the pan or wok. Stir-fry for 30 secs or until choy sum is wilted.
  4. Step 4

    Return the beef to the pan or wok with the cashews, hoisin sauce and garlic. Stir-fry for 30 secs or until heated through.
  5. Step 5

    Divide the rice and stir-fry among serving plates. Sprinkle with chilli and serve with lime wedges.
