Honey and balsamic pork chops with pineapple salsa

Topped in a tangy pineapple salsa, these honey and balsamic pork chops are the ultimate balance of sweet and savoury. Try out this dish this week, it's sure to be a crowd pleaser.

Ingredients

  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tbsp light soy sauce
  • 2 garlic cloves, crushed
  • 4 x 200g Coles Australian Pork Loin Chops
  • 1 tbsp peanut oil
  • ½ pineapple, cut into 1cm pieces
  • ¼ cup mint leaves
  • 1 long red chilli, seeded, cut into thin strips
  • ½ small red onion, finely chopped
  • 1 tbsp lime juice
  • 1 tsp peanut oil, extra
  • Steamed long-grain rice, to serve
  • Lime wedges, to serve

Method

  1. Step 1

    Combine honey, vinegar, soy and garlic in a large bowl. Add pork and turn to coat.
  2. Step 2

    Heat oil in large frying pan on medium heat. Add pork and cook for 3 mins each side or until cooked through. Transfer to a plate. Rest for 5 mins.
  3. Step 3

    Combine pineapple, mint, chilli, onion, lime juice and peanut oil in a medium bowl. Season with salt and pepper. Serve pork with steamed rice, pineapple salsa and lime wedges.
