Ingredients

  • 125ml honey
  • 1 tbs thinly sliced ginger
  • 60ml water
  • Ice cubes, to serve
  • 80ml lemon juice
  • 40ml Dimple 12YO Blended Scotch Whisky
  • 40ml Laphroaig 10YO Single Malt Scotch Whisky
  • Lemon rind twists, to serve

Method

  1. Step 1

    Combine the honey, ginger, and water in a small saucepan. Bring to a simmer over medium heat. Alternatively, combine the honey, ginger, and water in a microwave-safe bowl. Heat in the microwave on High for 2 mins. Strain the honey syrup through a fine sieve into a heatproof jug or bowl, discarding the ginger. Set aside to cool.

  2. Step 2

    Fill a cocktail shaker with ice. Add the cooled honey ginger syrup and lemon juice. Shake until well combined.  Fill 2 serving glasses with ice. Strain the honey mixture into the glasses. Top with blended scotch whisky and single malt scotch whisky. Garnish with lemon rind.
