Honey mustard salmon

Ingredients

  • 432g can Dole Fruit Mix in Juice, drained
  • ¼ red onion, finely chopped
  • ¼ red capsicum, finely chopped
  • 1 tbs lime juice
  • 1½ tbs Dijon mustard
  • 1½ tbs honey
  • 1 tsp chilli sauce or Tabasco sauce
  • 4 salmon portions, skin on
  • 1 avocado, stoned, peeled, thinly sliced

Method

  1. Step 1

    Combine fruit mix, onion, capsicum and lime juice Season. Cover and place salsa in the fridge until serving.

  2. Step 2

    Combine mustard, honey and chilli sauce in a small bowl. Season.

  3. Step 3

    Preheat grill on high. Place salmon on a greased baking tray. Brush with half the mustard mixture. Cook under grill for 3 mins. Turn and brush with remaining mustard mix. Grill for a further 3 mins or until cooked to your liking.

  4. Step 4

    Serve salmon with avocado and couscous. Top with salsa.
