Ingredients

  • ½ butternut pumpkin (about 700g), peeled, seeded, cut into 4cm pieces
  • 2 tbs honey

Method

  1. Step 1

    Place the pumpkin in a large saucepan and fill with enough water to cover by 2.5cm. Bring to a simmer over high heat, then reduce heat to medium and simmer for 20-25 mins or until the pumpkin is very tender.
  2. Step 2

    Strain in a colander and set colander over the hot saucepan to allow pumpkin to steam dry.
  3. Step 3

    Transfer the drained pumpkin and honey to a blender or food processor and blend until smooth.
