Ingredients

  • 1 Lebanese cucumber, peeled into ribbons
  • 1 tbs white wine vinegar
  • Pinch of caster sugar
  • 2 tbs kimchi
  • 1/3 cup (100g) mayonnaise
  • 8 slices Coles Finest by Laurent Rye Sourdough Vienna*
  • 60g Coles 4 Leaf Salad Mix
  • 1/2 Coles No Added Hormones Hot Roast Beef, thinly sliced
  • 4 slices Swiss cheese

Method

  1. Step 1

    Combine the cucumber, vinegar and sugar in a medium bowl. Season well with salt. Set aside for 15 mins to develop the flavours.

  2. Step 2

    Meanwhile, combine the kimchi and mayonnaise in a small bowl. Season.

  3. Step 3

    Drain the cucumber mixture. Spread the bread slices with the mayonnaise mixture. Top half the bread slices with salad mix, beef, cucumber and cheese. Top with the remaining bread slices. Secure with skewers to serve.
