Ingredients

  • 600g white chocolate, chopped
  • 20g butter
  • 280g pkt marshmallows, chopped
  • 1/3 cup (45g) dried cranberries
  • 1/4 cup (10g) flaked coconut, toasted
  • 1 cup (160g) dry-roasted almonds, coarsely chopped
  • 1/4 cup (35g) pistachios, chopped
  • 210g pkt Arnott’s Iced Vovo biscuits, coarsely chopped
  • 100g gingernut biscuits, chopped
  • Chopped almonds, extra, to decorate
  • Chopped pistachios, extra, to decorate
  • Chopped Arnott’s Iced Vovo biscuits, extra, to decorate

Method

  1. Step 1

    Grease the base and sides of a 20cm x 30cm (base measurement) lamington pan and line with baking paper, allowing the sides to overhang. Place chocolate and butter in a large heatproof bowl over a saucepan of simmering water (make sure bowl doesn’t touch the water). Cook, stirring, for 5 mins or until chocolate melts and mixture is smooth.
  2. Step 2

    Stir in the marshmallow, cranberries, coconut, almond, pistachio and combined biscuit. Spoon into prepared pan. Sprinkle with extra almond, extra pistachio and extra Iced Vovo biscuit.
  3. Step 3

    Place in the fridge for 1 hour or until firm. Cut into pieces to serve.
