Change up burger night with these delicious Indian-style pumpkin and corn burgers. Packed with tatziki and mango chutney these burgers are full of flavours.

Indian-style pumpkin and corn burger

Ingredients

  • 1 red onion, thinly sliced
  • 2 tbs lemon juice
  • 2 tsp caster sugar
  • 1 tsp salt
  • 2 x 250g pkts Coles Nature’s Kitchen Curried Pumpkin & Corn Burgers
  • 4 Coles Bakery Wholemeal Bread Rolls*, split, toasted
  • ¼ cup (80g) mango chutney
  • 8 butter lettuce or green oak lettuce leaves
  • ½ cup (140g) black swan skinny tzatziki dip
  • 1 carrot, peeled, cut into long matchsticks

Method

  1. Step 1

    Combine the onion, lemon juice, sugar and salt in a small bowl. Set aside for 10 mins to soak. Drain well.
  2. Step 2

    Heat a chargrill on medium-high. Lightly spray burger patties with olive oil spray. Cook for 4-5 mins each side or until light golden and heated through.
  3. Step 3

    Divide the roll bases among serving plates and spread evenly with mango chutney. Top with the lettuce, burger patties, tzatziki, carrot and onion. Serve immediately.
