These individual pear cobblers are perfect for dinner parties and entertaining. Serves 8 so there is plenty to go around.

Individual pear cobblers


  • 4 strips orange rind
  • ½ cup (125ml) orange juice
  • 2 cinnamon sticks or quills
  • 1 tsp vanilla extract
  • 1 tbs honey
  • 4 pears
  • 1 cup (150g) self-raising flour
  • 2 tsp caster sugar
  • 25g chilled butter, chopped
  • ⅓ cup (80ml) buttermilk
  • vanilla ice-cream, to serve

  1. Step 1

    Preheat oven to 180°C.
  2. Step 2

    Combine the orange rind, orange juice, cinnamon, vanilla, 1/3 cup (80ml) water and honey in a large baking dish. Cut the pears in half lengthways. Scoop out the seeds. Place the pears, cut-side down, in dish. Cover with foil. Bake for 40 mins or until pears are tender.

    Combine flour and sugar in a medium bowl. Add butter. Use your fingertips to rub the butter into the flour mixture. Add the buttermilk. Use a butter knife to stir until just combined.
  4. Step 4

    Turn pears in dish over to cut-side up. Fill the centres with the cobbler mixture. Bake for 20 mins or until cobbler is lightly golden.
  5. Step 5

    Serve the pears with ice-cream and drizzle with pan juices.
