Italian sausage and potato soup

Ingredients

  • 2 x 350g Coles Kitchen Crème Royale Mashed Potato
  • 4 cups (1L) salt-reduced chicken stock
  • 1 tbs extra virgin olive oil
  • 500g Coles Finest Italian Style Pork Sausages, casings removed
  • 2 spring onions, thinly sliced
  • 2 shortcut bacon rashers, thinly sliced
  • 2 cups (80g) coarsely chopped kale
  • 1/3 cup (80ml) thickened cream
  • Finely grated parmesan, to serve
  • Basil leaves, to serve
  • Thinly sliced jalapeño chilli, to serve (optional)

Method

  1. Step 1

    Combine the mashed potato and stock in a medium saucepan over medium heat. Bring to a simmer, whisking the mashed potato until smooth.

  2. Step 2

    Meanwhile, heat oil in a large frying pan over high heat. Add the sausage, onion and bacon and cook, stirring with a wooden spoon to break sausage into small pieces, for 10 mins or until sausage is golden and bacon is crisp. Add the kale and cook for 2 mins or until kale wilts.

  3. Step 3

    Add the cream and sausage mixture to the mashed potato mixture and stir to combine. Divide the soup among serving bowls. Serve with parmesan, basil and chilli, if using.
