Italian-style beef rolls in tomato and basil sauce

Ingredients

  • 1kg Coles Australian Beef Corned Silverside
  • 8 slices prosciutto
  • 16 basil leaves
  • 200g mozzarella, sliced
  • 2 tsp olive oil
  • 2 garlic cloves, crushed
  • 400g btl Barilla Pasta Sauce with Basil
  • basil leaves, to serve
  • green salad, to serve

Method

  1. Step 1

    Thinly slice silverside lengthways into eight 1cm-thin steaks. Place each steak between 2 pieces of baking paper. Pound with a rolling pin or meat mallet until steak is 5mm thick.
  2. Step 2

    Place 1 slice prosciutto on a clean surface. Top with 1 slice of steak, 1 slice of mozzarella and 2 basil leaves. Roll up tightly to enclose filling. Secure with kitchen string. Repeat to make 8 rolls.
  3. Step 3

    Heat oil in a frying pan over medium heat. Cook rolls, turning, for 5 mins or until browned all over. Transfer to a plate. Add garlic to the pan. Cook for 1 min. Add pasta sauce and 1/4 cup (60ml) water. Season. Bring to the boil. Reduce heat to low. Return beef rolls to the pan. Cover and cook for 15 mins.
  4. Step 4

    Serve beef rolls with green salad.
