Put on you cowboy hat because you're having your jacket potatoes loaded-up Texan-style!

Jacket potatoes with Texan-style beef

Ingredients

  • 6 large brushed potatoes, scrubbed
  • 1/4 quantity Texan-Style Pulled Beef (see recipe)
  • 1/2 x 400g can black beans, rinsed, drained
  • 1/2 cup (60g) coarsely grated cheddar
  • 1 vine-ripened tomato, finely chopped
  • 1/2 red onion, finely chopped
  • 2 tbs finely chopped chives
  • mint leaves, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Prick potatoes all over with a fork. Wrap each potato in foil and place on a baking tray. Bake for 1 hour or until tender. Unwrap potatoes and bake for a further 10 mins or until light golden. Set aside to cool slightly.
  2. Step 2

    Meanwhile, combine beef and beans in a small saucepan over low heat. Cook for 5 mins or until heated through.

  3. Step 3

    Use a sharp knife to cut a cross in top of each potato and gently squeeze base to open. Top with beef mixture and sprinkle with cheddar. Bake for 5 mins or until cheddar melts.
  4. Step 4

    Combine tomato and onion in a bowl. Divide potatoes among serving plates. Top with tomato mixture, chive and mint
