Chicken and pesto salad

Ingredients

  • 1 avocado, stoned, peeled, finely chopped
  • 1 red onion, finely chopped
  • 250g cherry tomatoes, halved
  • 1 continental cucumber, coarsely chopped
  • 2 tbs Coles Basil Pesto
  • 1 tbs lemon juice
  • 350g Moira Mac’s Classic Roasted Chicken Breast*, chopped
  • 60g pkt Coles Australian Baby Spinach

Method

  1. Step 1

    Combine avocado, onion, tomato and cucumber in a large bowl.

  2. Step 2

    Combine the pesto and lemon juice in a large bowl. Add half the chicken and toss to combine.

  3. Step 3

    Arrange the spinach on a serving platter. Top with chicken mixture and avocado mixture. Top with remaining chicken. Season with pepper.
