Jenny-Lee’s avocado and goat’s cheese bruschetta


  • 1 Coles Bakery Stone Baked Pane di Casa Loaf, cut into 10 slices
  • 1 tbs garlic oil
  • 1 avocado, stoned, peeled, mashed
  • 2 tsp lemon juice
  • 200g beetroot hommus
  • 100g goat’s cheese
  • 60g pkt Coles Australian Baby Rocket

  1. Step 1

    Heat a chargrill on high. Brush both sides of the bread with oil. Cook for 1-2 mins each side or until toasted.

  2. Step 2

    Combine avocado and lemon juice in a bowl. Spread over the toasts. Top with hommus, goat’s cheese and rocket to serve. Season with pepper.
