To make lime syrup, place sugar and 1 cup (250ml) water in a medium saucepan. Place over low heat and cook, stirring, until the sugar dissolves. Add the lime leaves and lime zest and simmer for 15 mins or until the syrup is slightly green in colour. Set aside to cool completely. Strain through a fine sieve into an airtight container. Discard solids.
Combine the soda water and 1 cup (250ml) lime syrup in a large jug. Pour among champagne glasses and decorate with a lime leaf to serve.
