Switch up your regular coleslaw recipe with this delicious apple and haloumi kaleslaw. Drizzled with a simple citrus dressing, this dish is a must-try for spring.

Kale and apple slaw with haloumi


  • 200g haloumi, thinly sliced
  • 1 bunch Coles Organic Green Kale, stalks removed, leaves shredded
  • 1 large organic carrot, peeled, cut into long matchsticks
  • 1 organic Pink Lady apple, cored, cut into matchsticks
  • 2 spring onions, thinly sliced lengthways
  • 1 organic beetroot, peeled, coarsely grated
  • 1 cup organic mint leaves
  • 1/3 cup organic flat-leaf parsley leaves


  • 1 lemon, juiced
  • 2 tsp Dijon mustard
  • 2 tbs olive oil

  1. Step 1

    Heat a barbecue grill or chargrill on high. Cook the haloumi for 1-2 mins each side or until golden brown.
  2. Step 2

    Combine the haloumi, kale, carrot, apple, spring onion and beetroot in a large bowl. Add the mint and parsley. Toss to combine.
  3. Step 3

    To make the dressing, whisk the lemon, mustard and oil in a small bowl. Season.
  4. Step 4

    Drizzle salad with dressing to serve.
