Korma pork burger

Ingredients

  • 500g Coles Australian Pork Mince
  • 1 tbs korma curry paste
  • 1 tbs Greek-style yoghurt
  • 1 tbs olive oil
  • 2 Lebanese cucumber, halved lengthways, seeded, thinly sliced
  • 4 radishes, thinly sliced
  • 2 spring onion, thinly sliced
  • 1 lemon, zested
  • 1 tbs chopped mint
  • 2 tbs Greek-style yoghurt, extra
  • 60g pkt Coles Australian Baby Spinach
  • 4 Coles Brioche Buns, split, toasted

Method

  1. Step 1

    Combine the mince, curry paste and yoghurt in a large bowl. Divide the mixture evenly into 4 portions and shape into patties.
  2. Step 2

    Heat the oil in a large frying pan over medium heat. Cook the patties for 4 mins each side or until browned and cooked through.
  3. Step 3

    Meanwhile, combine the cucumber, radish, spring onion, lemon zest, mint and extra yoghurt in a small bowl.
  4. Step 4

    Place bun bases on serving plates. Top with spinach, patties and cucumber mixture. Season. Top with bun tops to serve.
