Lamb and tabouli style wraps

These hearty lamb wraps are a tasty way to make the most of leftovers from your roast dinner.

Ingredients

  • 1 1/2 cups prepared tabouli, cooked couscous, chickpeas, cooked rice or canned beans
  • 2 tomatoes or 200g punnet cherry tomatoes, chopped
  • 1/2 cup chopped herbs such as parsley, basil, mint or dill
  • 1 lemon or lime
  • 1 tbs oil
  • 6 flat breads such as lebanese bread, tortillas or soft wraps, warmed
  • 1/2 cup (130g) sweet potato hummus, beetroot hummus, tzatziki or dip of choice
  • 500g thinly sliced leftover roast lamb

Method

  1. Step 1

    Combine the tabouli or couscous or chickpea, rice or beans, tomato, herbs, zest, juice and oil in a medium bowl. Season.

  2. Step 2

    Spread wraps with dip, then add lamb and salad mixture. Fold to enclose filling.

Recipe tip

If you don’t like tabouli, you can use a Coles salad kit or use up leftover salad in these wraps. 

To prevent wraps or tortillas from going stale, freeze wrapped tightly in foil for up to 3 months.
