Lamb kofta salad

Ingredients

  • 500g Coles Graze Lamb Mince
  • 1/4 cup (40g) pitted Sicilian olives, finely chopped
  • 2 spring onions, chopped
  • 1 garlic clove, crushed
  • 1 tbs olive oil
  • 250g Coles Golden Supergreen Salad Kit
  • 350g mixed tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/3 cup pomegranate seeds
  • 2 tbs olive oil, extra

Method

  1. Step 1

    Combine the mince, olive, spring onion and garlic in a medium bowl. Season. Divide into 16 portions and roll each portion into an oval shape. Drizzle with oil and toss to coat.
  2. Step 2

    Heat a barbecue grill or chargrill on medium. Cook the koftas, turning occasionally, for 10 mins or until cooked through.
  3. Step 3

    Combine salad leaves from the salad kit with tomato, onion and pomegranate seeds in a large bowl. Arrange on a serving dish. Top with kofta. Sprinkle with almond from the salad kit. Season. Combine the dressing from the salad kit with extra oil in a small jug. Drizzle over the salad to serve.
