Jazz up your afternoon tea spread with these easy pikelets. Brimming with chocolate and coconut, bring them together with cream, jam and strawberries.

Lamington Pikelets


  • 200g pkt Coles Traditional Pikelets
  • 1/2 cup (125ml) Coles Chocolate Topping
  • 1 cup (80g) shredded coconut
  • 300ml thickened cream, whipped
  • 1 tbs raspberry jam
  • Strawberries, sliced, to decorate
  • Coles Chocolate Topping, extra, to decorate

  1. Step 1

    Place the chocolate topping and coconut in separate bowls. Lightly coat 1 pikelet in topping, then dip in coconut and turn to coat. Place on a lined tray. Repeat with the remaining pikelets, topping and coconut

  2. Step 2

    Gently marble the cream and jam in a bowl. Place 1 pikelet on each serving plate. Top with sliced strawberry and a little cream mixture. Top with the remaining pikelets, remaining cream mixture and extra sliced strawberry. Drizzle with extra chocolate topping to serve.
