  • 180g dark chocolate, chopped
  • 125g unsalted butter, plus extra for greasing
  • 2 free-range eggs
  • 2 free-range egg yolks
  • 1/4 cup (55g) caster sugar
  • 2 tbs plain flour
  • Berries and ice cream to serve

Method

  1. Step 1

    Preheat oven to 200°C. Grease four x 1 cup (250ml) capacity ovenproof dishes. Dust with sifted cocoa powder.

  2. Step 2

    Stir chopped chocolate and butter in a heatproof bowl over a saucepan of simmering water for 10 mins or until butter melts and mixture is smooth.

  3. Step 3

    Use an electric mixer to whisk the eggs, egg yolks and sugar in a medium bowl until pale and creamy. Sift over flour. Use a large metal spoon to gently fold to combine. Add chocolate mixture. Gently fold to combine. Spoon evenly among the prepared dishes. Place on a baking tray.

  4. Step 4

    Bake for 10-12 mins or until firm to touch but still soft in the centre. Set aside for 5 mins. Run a knife around edge of cakes then turn onto serving plates. Dust with sifted cocoa powder. Serve immediately with berries and ice cream.

You can prepare the batter up to 2 days in advance and store it covered in the fridge. The batter can also be frozen in the ramekins you intend to bake them in for up to 3 months. Any leftover lava cakes can be kept in the fridge, however, when reheated the centre may set.
