Loaded baked potatoes

Ingredients

  • 4 potatoes
  • 1/2 cup (50g) frozen chopped onion
  • 1 cup (120g) frozen Coles Australian Carrots, Corn And Peas mix
  • 2 tsp Cajun seasoning
  • 420g can Coles Simply Baked Beans in Tomato Sauce
  • 1/2 cup (60g) Coles Four Cheese Melt Shredded Cheese
  • 60g Coles Australian 4 Leaf Salad

Method

  1. Step 1

    Line a baking tray with baking paper. Cut a cross into the top half of each potato. Place potatoes on a microwave-safe plate and microwave on high for 20-25 mins or until tender. Set aside to cool slightly.

  2. Step 2

    Meanwhile, heat a medium frying pan over medium heat. Add onion and cook, stirring, for 3 mins or until soft. Add the vegetable mix and cook, stirring, for 1 min or until starting to soften. Add the seasoning and cook, stirring, for 1 min or until aromatic. Add the baked beans and bring to a simmer.

  3. Step 3

    Preheat grill on high. Carefully squeeze potatoes to open slightly and place on the lined tray. Divide the bean mixture evenly among the potatoes. Sprinkle with cheese. Cook under grill for 5 mins or until the cheese melts.

  4. Step 4

    Divide the potatoes among serving plates. Serve with salad leaves.
