Pack the picnic basket, the family and a song book - and head for the hills. This Loaded Beef Brisket Campfire Nachos recipe is one to be relished in the great outdoors.

Ingredients

  • 1 red onion, finely chopped
  • 2 red capsicums, seeded, finely chopped
  • 125g can corn kernels, rinsed, drained
  • 200g Perino tomatoes, halved
  • 2 tsp chipotle seasoning
  • 2 tbs lime juice
  • 150g corn chips
  • 800g pkt Coles Made Easy Slow Cooked Brisket with American Style BBQ Sauce, prepared following packet directions, cooled
  • ½ cup (50g) shredded pizza cheese

Method

  1. Step 1

    Prepare a camp fire. Combine the onion, capsicum, corn, and tomato in a small bowl. Add the chipotle seasoning and lime juice and stir to combine. Season.
  2. Step 2

    Place the corn chips in base of a large heavy-based flameproof frying pan. Top with the brisket and cheese. Loosely cover with foil. Cook over hot coals for 5 mins or until the cheese melts. Uncover and cook for 5 mins or until heated through. Top with the onion mixture to serve.

    Tip: SERVE WITH... coriander sprigs, sliced jalapeño chilli and lime wedges
