Loaded sweet potato mash

Ingredients

  • 1kg Red Garnet sweet potato, peeled, coarsely chopped
  • 1/2 cup (120g) sour cream
  • 4 bacon rashers, trimmed, finely chopped
  • 1 cup (100g) Coles Australian Shredded Pizza Blend
  • 2 spring onions, thinly sliced

Method

  1. Step 1

    Boil, steam or microwave the sweet potato until very tender. Transfer to a heatproof bowl. Add the sour cream. Use a fork to roughly mash until well combined. Season.
  2. Step 2

    Meanwhile, cook the bacon in a large non-stick frying pan over high heat, stirring, for 5 mins or until golden and crisp. Transfer to a plate lined with paper towel.
  3. Step 3

    Preheat grill on high. Add half the bacon, onion and cheese to the sweet potato mixture. Fold to combine. Spoon the mixture into a 6-cup (1.5L) ovenproof dish. Sprinkle with remaining bacon, onion and cheese. Cook under the grill for 5 mins or until cheese melts and is golden.
