  • 30ml vodka
  • 10ml lychee liqueur
  • 20ml lime juice
  • 10ml sugar syrup
  • 2 slices cucumber
  • Ice cubes, to serve
  • Ginger beer, to serve
  • Mint sprig, to decorate

  1. Step 1

    Place the vodka, lychee liqueur, lime juice, syrup and cucumber in a cocktail shaker. Use a muddler or a pestle to crush the cucumber until softened.
  2. Step 2

    Add ice cubes. Shake for 30 secs or until chilled. Add ice cubes to a serving glass. Strain the mixture through a fine sieve over ice in the glass. Top with ginger beer and decorate with mint to serve.
