Put a fresh twist on your pork with this citrusy roast pork recipe. Served with baked veggies, this dish is a tasty spin on a classic you can't go wrong with.

Mandarin roasted pork

Ingredients

  • 2 tbs olive oil
  • 1 tsp finely grated mandarin rind
  • 1/4 cup (60ml) mandarin juice
  • 1 tsp ground cinnamon
  • 1 tbs finely grated ginger
  • 1 tbs sea salt flakes
  • 4 mandarins, thickly sliced
  • 1.8kg Coles Australian Pork Leg Roast Boneless
  • 1 head cauliflower, cut into florets
  • 1 head broccoli, cut into florets
  • 200g green beans, trimmed
  • 2 garlic cloves, crushed
  • Coriander leaves, to serve

Method

  1. Step 1

    Preheat oven to 230°C. Combine half the oil, mandarin rind, mandarin juice, cinnamon, ginger and salt in a small bowl.
  2. Step 2

    Place the pork in a large roasting pan. Pour over the oil mixture and rub into pork rind to coat. Roast for 30 mins.
  3. Step 3

    Reduce oven to 180°C. Transfer the pork to a plate. Place the sliced mandarin in the pan. Top with the pork. Roast for 11/2 hours or until the pork is cooked through. Set aside, covered, for 10 mins to rest.
  4. Step 4

    Meanwhile, steam, boil or microwave the cauliflower, broccoli and beans separately until tender. Combine the cooked vegetables in a large bowl with the garlic and remaining oil. Season.
  5. Step 5

    Thickly slice the pork. Sprinkle the vegetable mixture with coriander to serve.
